Why did Paul take Matthias’ place?

I wouldn’t say that Paul took Matthias’ place, but rather he took Judas’ place.

The Apostles knew that there was to be 12 of them. They jumped the gun a bit to replace Judas. God didn’t condemn the Apostles for acting hasty, He merely ingnored them and when the time was right, he revealed to them His choice for replacement. Just as it was God’s choice who the original 12 were, it was His choice and no one elses who would fill the vacancy.
